The Art of Alaskan Birch Syrup
Since 1990, Kahiltna Birchworks has been handcrafting world-class Alaska birch syrup from sustainably harvested trees in the boreal forests. We tap thousands of birch trees each spring and evaporate the sap in small batches at our Talkeetna sugar shack, producing one of the rarest natural sweeteners and maple syrup alternatives on earth.
Alaska birch syrup isn't maple. It's deeper, richer, and more complex, often compared to molasses, balsamic vinegar, or tamarind. With natural notes of caramel, spice, and cherry, this unique natural sweetener pairs beautifully with both sweet and savory dishes: from glazed meats to root vegetables, cocktails to desserts.
Every drop of Alaska birch syrup takes over 100 gallons of sap to make, making it one of the most labor-intensive natural sweeteners in the world. The result? Pure Alaska in a bottle.

Each grade captures a unique moment in Alaska's spring harvest, offering distinct flavor profiles from our time-honored evaporation process.
Reserve
Tapped on the first day of the season, our Reserve syrup is the lightest and sweetest of the harvest. It carries delicate vanilla and honey notes with a whisper of birch’s natural earthiness.
Tasting Notes: Light-bodied, gently sweet, with floral undertones and a clean finish.
Pairings: Drizzle over french toast or panna cotta. A beautiful complement to soft cheeses or in craft cocktails.
Early Run
Harvested in the first week of the run, Early Run syrup offers a golden amber hue and a balanced sweetness with hints of caramel and molasses.
Tasting Notes: Light and vibrant, with caramelized sugar and citrus peel on the finish.
Pairings: Use on breakfast items, yogurt, swirl into oatmeal or tea, or pair with aged cheese.
Mid Run
Collected at the midpoint of the season, this syrup is balanced and robust with deep complexity. Notes of toasted toffee, dried fruit, and cherry define this versatile kitchen staple.
Tasting Notes: Full-bodied with molasses depth, dried fig, and subtle spice.
Pairings: Ideal for baking, grilling, or as a replacement for molasses or balsamic. Try in BBQ sauce or over roasted squash.
Late Run
As the season closes, the sap becomes more mineral-rich—yielding a dark, intensely flavorful syrup prized by chefs.
Tasting Notes: Intensely savory with notes of umami, coffee, and toasted bark.
Pairings: Use in marinades, stir-fries, and braises. Enhances roasted meats, root vegetables, and dark chocolate desserts.
