What makes birch special?

Birch Sap: Straight from the Tree

Each spring, birch trees draw water and nutrients from the forest floor as sap begins moving through the tree. Fresh birch sap is clear, delicate, and naturally contains minerals, electrolytes, amino acids, and other plant compounds.

Its mineral profile includes naturally occurring potassium, calcium, magnesium, manganese, and other trace minerals. That combination has made birch sap a traditional spring beverage across Northern Europe and other northern cultures for centuries.

At Hammers Family Birch, this raw certified organic Alaska birch sap is the foundation of Birch Brew. Rather than pasteurizing it or concentrating it with heat, we preserve the sap in a very different way: through fermentation.

Birch sap has been consumed for generations across Northern Europe and other northern cultures as a traditional spring time tonic. Along with naturally occurring minerals and electrolytes, it contains amino acids, organic acids, and other plant compounds that have attracted increasing scientific interest. Its delicate composition reflects the nutrients moving through the tree each spring and provides the unique starting point for our wild fermentation process.

Wild Alaska Chaga

Chaga is a slow-growing fungus found on birch trees throughout northern forests and has a long history of traditional use across Siberia, Northern Europe, and other boreal regions.

Chaga naturally contains a complex mixture of compounds including beta-glucans, polyphenols, melanin, and triterpenes derived in part from its relationship with the birch tree. These compounds have made chaga an active area of scientific research and an enduring part of traditional northern herbal practices.

We sustainably harvest wild Alaska chaga in small quantities and use it to craft our chaga teas and extracts.
